OK. I admit it. I’m a confirmed dessert addict. But I’m also an athlete so I need to be careful not to overindulge to the point of busting out the seams of my lycra. To avoid the “indulge bulge”, I stick to desserts that are healthy, low fat, and yet satisfy my voracious sweet tooth.
This recipe is a favorite of mine because I can use it to make moist tasty cookies or energy bars I can take on bike rides. I carry a few in a plastic bag or aluminum foil and stash them in my back pocket for the ride. They are so irresistible they encourage me to eat enough during the ride so I avoid the hit-the-wall-bonk and fulfilling enough to prevent me from overheating after the ride.
